The School - Hospitality
The AlbaBarolo School provides an ideal environment for study and a high quality of life. The students’ housing needs have been considered and designed in every detail.
Five options for lodging are available: the School’s guest quarters, nearby bungalows, area’s Bed and Breakfasts, farm holiday facilities and a selection of higher category hotels.
The school also offers a wide range of recreational facilities so that the students can get to know each other during their moments of relaxation.

Ricotta Spinach Gnudi with Vegetables and Speck
Ingredients
Server 10
- Ricotta 2 lbs. 3 oz.
- Spinach 4 lbs. 6 oz.
- Parmigiano, grated 6 ounces
- Flour 9 ounces
- Egg Yolks 7 each
- Salt To taste
- Nutmeg To taste
- Speck 7 ounces
- Seasonal Vegetables 1 lb. 2 oz.
Preparation
1. Boil the spinach in salted water; drain and squeeze out excess liquid. Puree the spinach.
2. Combine the spinach puree and the ricotta. Add the egg yolks, salt, nutmeg and cheese.
3. Add the flour to the ricotta mixture and combine well.
4. Form the mixture into small spheres and place them on a sheetpan in the refrigerator for several hours.
5. Cook the gnudi in boiling broth and serve with an abundant amount of grated cheese and the seasonal vegetables cooked with the speck.
