The Project - Opportunities
One significant result of the project is the promotion of the Italian eno-gastronomic products in international markets by means of the construction of a solid network between corporate bodies and local institutes, distributors and restaurants.
To understand the commercial importance of the project, just remember that 67% of the United States population chooses Italian restaurants as their first choice in ethnic dining.
The best Italian restaurants, the 123 members of the G.R.I., are located in 24 states and do an estimated annual business of 400 million dollars, managing 8 million covers a year.
These dizzying numbers illustrate the great commercial opportunity for Italian businesses who are looking to bring their products to the USA and potentialize their presence on GRI menus by participating in the Project “Italian food culture, cuisine and products in the U.S.A.” and by collaborating with the AlbaBarolo International School of Italian Cuisine.

Cuttlefish with Beans and Aromatic Herbs
Ingredients
Server 4
- Cuttlefish, cleaned, lozenge cut 800 g
- Cannellini Beans, canned, strained, rinsed 200 g
- Preserved Tomatoes As needed
- Tomato Pureč 100 g
- Aromatic Herbs (thyme, marjoram, parsley, bay leaf
- Onion, small 1 each
- White Wine ˝ cup
- Chili Pepper To taste
- Anchovies, in oil, chopped 50 g
- Fish Stock As needed
- Olive Oil, extra-virgin
- Salt and Pepper To taste
Preparation
1. Prepare the cuttlefish, discarding the harder cartilage. In a two handled saucepan sweat the onion with some oil, the chili pepper, and the anchovies. Add the preserved tomatoes and the cuttlefish, season with salt and pepper. Add the wine and reduce. Add the tomato pureč and the fish stock; cook over low heat for about 30-40 minutes.
2. Add the aromatic herbs and the beans and season if necessary. Cook for another ten minutes over low heat, mixing often.
3. Serve sprinkled with chopped aromatic herbs and a drizzle of olive oil.
Note
You can also use dried beans placed in a cold water bath over night.
