The Project - Philosophy
“Italian cuisine is a cuisine based on products; if the product is genuine, the quality of the dish can only be superior.”
The knowledge of ingredients and the ability to prepare these ingredients are inseparable.
Products are the key to good Italian cooking, the excellence of which is directly derived from the quality of those products and from the richness of the lands which created the flavors.
Inspite of its regional typicity, it is essential that our cuisine be presented to the world not as the sum of many regional cuisines, but as one great reality called “Italian Cuisine.”

Chickpea Puree with Shrimp and Rosemary
Ingredients
Server 4
- Chickpeas, boiled 2 lbs 3 oz.
- Milk 1 liter
- King Prawns 6 lbs. 9 oz.
- Garlic 3 cloves
- Rosemary
- Bay Leaf 1 each
- Chili Pepper 1 each
- Olive Oil, extra-virgin 3 ½ fl. oz.
- Salt and Pepper To taste
Preparation
1. Boil the milk with 2/3 of the chickpeas; puree. Strain the chickpea puree and then fold in the remaining whole chickpeas.
2. Peel the shrimp and devein.
3. In a pan, heat the oil, garlic, rosemary leaves, bay leaf and chili pepper; add the shrimp and cook for a few minutes.
4. Spoon the chickpea puree onto the plates and cover with the shrimp. Decorate with a branch of rosemary.
